Italian Turkey Meatballs and Zoodles with Marinara


Classic spaghetti and meatballs with a healthy twist! Zoodles are noodles made by thinly slicing zucchini squash with a spiral slicer or a mandolin.

ZOODLES

Ingredients:

4 Large Zucchinis

2 Cloves Minced Garlic

1 tablespoons Olive Oil

Salt/Pepper to taste

Directions

1. Use a spiral slicer or the most comparable setting on your mandolin slicer to create noodle-like zucchini strings

2. Heat oil in saute pan over medium high heat

3. Add zoodles and garlic to pan and saute 3-5 minutes (the trick to cooking zucchini noodles is to remove from heat before fully cooked. The residual heat from the pan will finish cooking the zoodles and prevent them from turning to mush and releasing water).

 

MARINARA

Ingredients:

1/4 cup Extra Virgin Olive Oil

1 small finely choppedOnion

1 clove minced Garlic

1 stalk finely chopped Celery

1 Carrot peeled and grated

1/2 teaspoon Salt

1/2 teaspoon Pepper

32 oz can Crushed Tomatoes

1 Bay Leaf

Directions:

1. Heat oil in sauce pan over medium heat

2. Add vegetables and cook in oil over medium heat until soft and fragrant

3. Add in remaining ingredients and stir

4. Reduce heat, cover, and simmer for 30 minutes

5. REMOVE BAY LEAF BEFORE SERVING**

** Bay leaves are inedible because they remain very stiff even after thorough cooking, and if swallowed whole or in large pieces, they may pose a risk of scratching the digestive tract or even causing choking.
