Mashed cauliflower is a healthier alternative for one of my all-time favorite comfort foods: mashed potatoes. Hot, creamy, and full of flavor, these pretend "potatoes" are a sneaky way to get a full serving of vegetables on everybody's plate. They can be served on the side of a weekday meal or dressed up for a Holiday plate.
Directions:
1. Carefully remove cauliflower florets from stem.
2. Place florets in sauce pan and fill 3/4 full of water and cover.
3. Boil over medium high heat for 30 minutes.
4. Remove from heat and drain water completely
5. Mash cauliflower in pan until smooth
6. Add olive oil, garlic powder, salt and pepper
7. Cook over medium heat, stirring occasionally, for 15 minutes
8. Stir in Parmesan cheese and serve
