Mahi Mahi Fish Tacos with Cilantro Lime Slaw


Who doesn't love tacos?? These tacos had everything: spice, crunch, citrus, and avocado.... oh, and they were delicious.

When you slice the perfect avocados and it's such a magical moment that you need to document it. BEHOLD.

Opt for corn tortillas over flour tortillas for a more authentic (and healthier) result. The tacos become more pliable if heated in an oven or in a skillet.

Lime Cilantro Cole Slaw

Ingredients:

  • 1/2 head of cabbage thinly sliced

  • 1 1/2 teaspoon salt

  • 3 limes juiced

  • 1/4 cup cilantro finely chopped

  • 1/2 cup Greek yogurt

  • 2 tablespoons honey

  • 1/4 teaspoon pepper

Directions:

1. Using your (clean) hands, combine cabbage, salt and lime juice in a large mixing bowl.

2. Stir cilantro, yogurt, honey, and pepper in a separate medium sized bowl.

3. Cover both bowls and refrigerate overnight.

4. Next day, combine yogurt mixture into cabbage mixture and toss together until fully integrated (tongs makes it easy to toss the heavy slaw).

5. Place slaw back in refrigerator until ready to serve.

note* refrigerating overnight allows flavors to combine and gives lime juice time to break down the "squeaky" texture of the cabbage.

Taco Seasoning

  • 2 tablespoons chili powder

  • 1/2 teaspoons garlic powder

  • 1/2 teaspoons onion powder

  • 1/2 teaspoons red pepper flakes

  • 1/2 teaspoons oregano

  • 1 teaspoon paprika

  • 1 tablespoon cumin

  • 2 1/2 teaspoons salt

  • 1 teaspoon pepper

Mahi Mahi

Ingredients:

  • 2 fillets of Mahi Mahi (you can substitute any other white fish)

  • 1 tablespoon high-heat cooking oil (we prefer grapeseed or avocado oil)

  • taco seasoning (see above)

Directions:

1. Season fish fillets generously.

2. Heat oil in pan over medium-high heat.

3. Place fish in hot pan FLESH-SIDE DOWN and cook for 5-6 minutes (we had to cut our fillets in half to fit in the pan).

4. Flip fish and cook another 5-6 minutes or until firm to touch .

5. Remove from heat and carefully remove skin.

To prepare your tacos:

flake the Mahi Mahi with a fork. layer your slaw, fish, favorite toppings, and finish with a squeeze of lime

Suggested toppings:

  • Sliced avocado

  • Jalapenos

  • Diced tomato

  • Cilantro

  • Salsa

  • Sour cream/Greek yogurt

  • Extra lime
