Swiss Steak is traditionally pounded beef served in a stewed tomato or mushroom gravy. This classic comfort food is great paired with a green veggie and potato
SWISS STEAK:
Ingredients:
2-2.5 lbs well tenderized round steak or "cubed" at the store
2 tablespoons cooking (we prefer olive, avocado, or grapeseed oil)
2 cloves garlic minced
1/2 white onion cut into large pieces
5-6 roughly diced carrots
1/4 cup flour
1 15 oz can tomato sauce
2 Cups water
1/4 teaspoon celery seed
1 teaspoon parsley
1/2 teaspoon thyme
Directions:
1. Shake steak in flour salt and pepper
2. Lightly brown floured steaks in oil in heavy bottom pan, remove and set aside
3. Run carrots and onion through food processor until finely chopped
3. Add carrots, onion, and minced garlic to pan and sautee until translucent
3. Add tomato sauce, water, your herbs and seasonings and stir
4. Add steak, cover and simmer until tender (about 1.5-2hrs)
5. You may need to add water while simmering to maintain desired thickness and prevent sticking

EASY GREEN BEANS:
Ingredients:
1 lb green beans
Directions:
1. "Snap" your green beans by removing the stem ends
2. Put in pan, cover in water (submerge) and boil for 15 minutes until tender
3. Drain and serve
MASHED PURPLE POTATOES
Ingredients:
3 lbs Purple potatoes
1/3 cup low fat milk
Optional: 2 tablespoons unsalted butter
Directions:
1. Place potatoes in sauce pan, cover with water and boil until soft
2. Drain water from pan, add milk (and optional butter) and mash until smooth.
3. Salt and pepper to taste
*We leave the skins on our mashed potatoes because that's where most of the root vegetable's nutrients are
*Look for purple potatoes in your grocery store's produce section by the sweet potatoes
