Sweet Potato Nachos with Homemade Pico De Gallo


tasty comfort food with a healthy twist!

 

Sweet Potato Chips

Ingredients:

1 large sweet potato

1 tablespoon grape seed oil

1/2 teaspoon salt

1/4 teaspoon pepper

Directions:

1. Preheat oven to 350

2. Peel and thinly slice sweet potato

3. Toss sweet potato slices with grape seed oil, salt, and pepper

4. Spread potato slices evenly on sheet pan

5. Bake chips for 30 minutes turning chips over every 10 minutes

6. Cool completely on the pan

7. Preheat over to 375

8. When ready to eat, place back in oven and bake for another 25 minutes, turning every 5 minutes.

 

Pico De Gallo

Ingredients:

2 Tomatoes

1/2 Red Onion

1 Jalapeno

1/4 teaspoon Salt

Directions:

1. Dice tomatoes

2. Dice red onion

3. Remove Jalapeno stem and seeds, and mince

4. Mix ingredients and add Salt
