Roasted Rosemary Garlic Red Skinned Potatoes


We're in a Thanksgiving state of mind lately, and we've been discussing recipes that are not only great for every-day meals, but would also be great on a holiday table. Potatoes in all forms are such a staple for holiday family dinners. We deconstructured some of our favorite recipes and removed all of the extras (butter, sour cream, cheese, etc.) to create a simple, EASY, and delicious side dish for any occassion. These potatoes are crispy on the outside, soft and creamy on the inside, and loaded with flavor!

I have heard a lot of people haphazardly disregard potatoes or lump them together with white bread and white pasta as "bad carbs" in an attempt to eat healthy. However, red skin potatoes have a number of health benefits and are loaded with fiber, B vitamins, Vitamin C, iron, and more potassium than a banana. Red potatoes should be part of a blanaced diet and healthy lifestyle if those are your goals.

I always cringe when I see people peeling red skin potatoes! Much of the nutritional value of a potato is found in ITS SKIN. Red potatoes are particularly healthy because of the thin, nutrient filled skins, so keep them on your potato while preparing this and other recipes.

There is so much flavor to be added with such minimal effort and little to no caloric effect. Chopped garlic, rosemary, natural sea salt and black pepper. That's it!!

 

Ingredients:

  • 5 large red-skinned potatoes cubed

  • 4 large garlic cloves chopped

  • 2 tablespoons olive oil

  • 1 tablespoon dried rosemary

  • 1 teaspoon sea salt

  • 1/2 teaspoon black pepper

Directions:

  1. Preheat oven to 400°

  2. Place cubed potatoes in large bowl, add olive oil, garlic, and spices

  3. Toss until evenly coated

  4. Spread in single layer on ungreased baking sheet

  5. Bake for 50 minutes (stirring twice throughout to ensure even baking).

Recipe makes 6 servings
